What if aging didn’t have to mean declining health?
Spend a few minutes in any pharmacy and you’ll quickly notice a pattern.
People are filling prescriptions for high blood pressure, diabetes, heart disease, arthritis, digestive issues, and countless other chronic conditions. Many accept this as a normal part of growing older.
But what if it isn’t?
What if many of the health challenges we associate with aging are not inevitable at all?
That was the focus of my recent conversation with Axay Shah, a man whose life story challenges many of the assumptions we have about health, vitality, and longevity.
At 67 years old, Axay has lived a raw plant-based lifestyle for more than 16 years. He takes no medications, has completed eight marathons, and continues to enjoy the kind of energy many people decades younger would envy.
His story is not about chasing perfection. It is about questioning conventional wisdom and taking responsibility for one’s health.
THE WAKE-UP CALL AT 50
Unlike many people who make significant lifestyle changes after a diagnosis, Axay’s motivation came from something less dramatic.
He simply noticed his energy was fading.
When he mentioned this to his doctor, he received a familiar response.
“You’re getting older.”
For many people, that explanation would have been enough.
For Axay , it became a challenge.
Instead of accepting declining vitality as his future, he began searching for answers. He started studying nature and asking a simple question:
Why do humans seem to struggle so much with food when other species instinctively know what to eat?
That question eventually led him to experiment with a raw plant-based lifestyle.
What started as curiosity became a lifelong commitment.
“I didn’t have a disease. I just didn’t want to accept that low energy was a normal part of getting older.”
Within weeks of changing his diet, he noticed improvements in energy, mental clarity, and overall well-being.
FOOD AS FUEL
One of the most interesting parts of our conversation centered around mindset.
Many people begin dietary changes by focusing on recipes, shopping lists, supplements, or what foods they must eliminate.
Axay approaches it differently.
He believes the first step is understanding why we eat.
His philosophy is simple: Food is fuel.
When we start viewing food primarily as nourishment rather than entertainment, many decisions become easier.
That doesn’t mean food can’t be enjoyable. It simply means the primary purpose of eating shifts from satisfying cravings to supporting health and vitality.
BREAKING FREE FROM FOOD ADDICTION
One topic that came up repeatedly was food addiction.
We live in a culture where overeating is normalized.
Celebrating? Eat.
Stressed? Eat.
Sad? Eat.
Bored? Eat.
Successful? Eat.
Food has become the answer to almost every emotion.
“Before you put something in your mouth, ask yourself: Will this help me or hurt me?”
PROGRESS OVER PERFECTION
One of the things I appreciated most about Axay ‘s approach is that he does not advocate perfection.
Too often people decide they must completely overhaul their lives overnight.
When they inevitably stumble, they conclude they have failed.
Axay encourages something different.
Start small.
Add more whole plant foods.
Pay attention to how your body responds.
Notice your energy.
Notice your sleep.
Notice your digestion.
Notice your mood.
The goal is not perfection.
The goal is progress.
EIGHT MARATHONS AFTER AGE 50
As impressive as his nutritional transformation is, Axay’s running journey may be even more remarkable.
At age 50, he announced that he wanted to run a marathon.
His friends laughed.
He had never run one before.
Some told him he was too old.
Others suggested it was unrealistic.
He decided to prove them wrong.
Through consistent training and determination, he completed his first marathon and eventually went on to finish eight.
“Listen to your body. Stay consistent. Focus on steady progress.”
THE CONFIDENCE THAT COMES FROM BETTER HEALTH
Toward the end of our conversation, I asked Axay what people ultimately gain from embracing a healthier lifestyle.
His answer surprised me.
He didn’t talk about weight loss.
He didn’t talk about blood pressure.
He didn’t talk about cholesterol.
He talked about confidence.
The confidence that comes from knowing you can make meaningful changes in your life.
THE BIGGER LESSON
Whether you choose a fully raw lifestyle, a whole-food plant-based diet, or simply commit to making healthier choices, the larger lesson remains the same.
We have more influence over our future health than many people realize.
While genetics play a role, our daily choices matter.
The foods we eat.
The thoughts we think.
The habits we repeat.
The actions we take.
Axay Shah’s story is a reminder that aging does not automatically mean decline.
At 67, he is living proof that vitality, energy, and purpose can continue well beyond what society often expects.
Don’t accept poor health simply because someone tells you it is normal.
Ask questions.
Do your research.
Stay curious.
And remember that every positive change begins with a single decision.
A healthier future may be closer than you think.

Kathleen, thank you for capturing this conversation with such care. You
didn’t just summarize the episode, you held the larger truth inside it.
The line that struck me most in your writing: “We have more influence over
our future health than many people realize.”
That is the whole message. Not raw food. Not marathons. Not zero
medications. Those are byproducts.
The real story is sovereignty. The quiet decision a person makes when they
stop accepting “you’re getting older” as a complete answer. That decision
is available to anyone, at any age, in any state of health.
To your readers: you do not need to go fully raw tomorrow. You do not need
to run marathons. You just need to ask one honest question before your
next meal: will this help me or hurt me?
That single question changed my life 16 years ago. It can change yours
too.
Thank you Kathleen for the work you do. Vegan Visibility is a platform
that genuinely moves people, and I am grateful our conversation lives here.
